I had actually made this dish, a couple of months ago - when the weather wasn't the stifling oven it is now. Soon I will post some cool food.

Bring the broth to a boil, slowly submerge the chicken. Turn off the flame then...cover and walk away... Who knew it could be so simple? When the broth cools (in about 8 hours) the chicken will be perfectly cooked.
It takes a lot of preparation, but once everything is organized it is surprisingly easy to do. This version is the result of many back and forth conference emails with my aunts who really know their food.
Or sauces. Since the chicken is pretty basic (though amazingly flavored with the lemongrass and shallots) it's really the sauces on the side that add to the flavor.Not to mention the rice cooked in the chicken stock and the fried crispy garlic to put on top.
Not really a side for Hainanese Chicken but quite yummy at any rate.
Mixed berries with some sugar, lemon juice and grated lemon zest. Yummy on a cheesecake or some frozen yogurt. The best thing about this is that when the berries mascerate in the sugar and get mushy, you can use it as a pretty fresh tasting spread on toast.
